Breakfast Sandwich


English muffin

Strip of bacon

1 egg


1 slice of preferred cheese (I like sharp cheddar)



Heat skillet over medium heat and spray with non-stick spray (or lightly grease with butter).

Cook bacon in greased skillet until crispy.

Meanwhile, toast english muffin.

Once bacon is done, remove and rest on paper towel. Reserve 1 tablespoon of bacon grease in pan, remove extra.

Return pan to heat and fry egg, flipping when needed, seasoning with salt and pepper.

Once egg is cooked to desired doneness (I like it slightly runny in the middle), place slice of cheese on top to melt.

To assemble, spread jam on both halves of toasted english muffin, break bacon strip in half and place on bottom half of sandwich, top with egg/cheese and finish with top half of english muffin.



(Makes 1 sandwich. Double, triple, quadruple to as much as you need)
