This recipe is a great way to sneak in some protein, vitamins and Omega-3s into your kid’s meal without raising suspicions!

Covert Tuna Casserole

 

INGREDIENTS:

1 package (14 oz) Mac & Cheese (I like Horizon organic brand)

1 can (10-3/4 oz) condensed cream of celery soup

1 can (6 oz) tuna, drained, flaked (water-packed tuna retains the Omega 3s better than oil-packed)

1 cup of frozen peas/corn (or any tiny, easy-to-hide veggie)

1/2 cup of milk (I use almond milk)

2 Tbsp. finely chopped onion

1 cup bread crumbs (fresh or canned)

2 Tbsp. butter, melted

 

DIRECTIONS:

Preheat oven to 350º F.

Prepare Mac & Cheese as directed on package.

Add soup, tuna, veggies, milk and onion to prepared Mac & Cheese. Mix lightly.

Spoon into 2 quart casserole dish.

Mix melted butter and bread crumbs. Sprinkle over dinner mixture.

Bake 35 minutes. Allow to cool for 5 minutes before serving.
