Summer Snack

1 slice of Pita bread

4 tablespoons of Hummus

1 Avocado (sliced)

6 Grape Tomatoes (halved)

Kosher salt & fresh-ground pepper to taste



Toast pita bread (I do this directly on the oven rack, until it starts to brown–a few minutes)

Cut pita into 4 quarters

Spread 1 Tablespoon of hummus onto each quarter

Top with pieces of avocado and grape tomatoes

Sprinkle with salt and pepper to taste
